Cod is both a nutritious and flavourful fish loaded with lean protein, vitamins, and minerals. Although lower in omega-3s than fatty fish, cod is still great as part of a healthy diet and can be prepared in a number of ways. It has a lean and mild flavour with large flakes and is tender to firm making it suitable for many dishes. Serve with olives and pancetta for a Mediterranean twist.
