Mahi Mahi Loin


If you’re looking for something different for your next barbecue then the Mahi-mahi – known in Spanish as the Dorado – is ideal. This fish has lean flesh with a mild, sweet flavour and is firm in texture with large, moist flakes. The flesh is lightly pink and is particularly good for marinating. Try placing in a mix of olive oil, lemon juice and Cajun seasoning for a few hours before cooking for a dish with the right amount of kick.
