Pollock is related to cod but with a slightly milder flavour. It has delicate white flesh with large flakes and a coarse texture and lower oil content. It is inexpensive and because of this, alongside its mild flavour, it is very versatile for a range of recipes. It can be fried, grilled, baked, used in stews or on the barbecue and it can also take on strong flavours such as cheese or chorizo. It is also popular for use in sushi.
