A whole sea bass needs very little by the way of cooking technique yet delivers impressive results when cooking simply with lemon and thyme. The delicate white fish is soft and flavoursome, needing very little other than some basic roasting. Cooking a fish whole helps to keep the flesh tender and moist and can be served in the roasting tin for an easy and straightforward dig-in dish. Placing the fish on top of any vegetables when cooking adds further flavour and simplicity to a meal.
