It suits barbecue meals because it holds its shape and is easy to prepare and is also good char-grilled or pan-fried. It also takes on strong flavours including teriyaki, harissa, ginger and garlic. It is oil rich and so offers many health benefits. Brush with oil before cooking to help it keep shape and moisture.
